I love to cook and as a retired nurse with heart disease and Cajun taste buds, I am always looking for ways to reduce the calories and fat in a recipe while maintaining taste.

A few years ago a friend suggested that I write the recipes down and make a cookbook.  I thought she was "full of it" and blew the idea off.  Well, boredom overcame me so I decided to type my recipes since most of them were either in my head or scribbled on a scrap piece of paper. 

After many hours of pecking away on the computer and researching calories, fat and fiber for every item in each recipe, I finally had a rough draft for the 1st cookbook.  The 1st cookbook consists of 143 recipes with reduced calorie versions where possible, in large print, with one recipe per page and calories, fat and fiber for every recipe.

I prepared one of my favorite recipes and my daughter took pictures of it to be used for the cover.  Another friend's daughter designed the cover.  All of the elements merged in October 2009 and adJUSTed FOR YOU was born.

I still had plenty of recipes to type so I decided to do a second cookbook.  The 2nd cookbook consists of 144 recipes with reduced calorie versions where possible, in large print, with one recipe per page and calories, fat and fiber counts for every recipe.  There are no duplicate recipes from the 1st cookbook in adJUSTed FOR YOU II.

Again, I prepared a favorite recipe and my daughter took pictures of it to be used for the cover.  My friend's daughter designed the 2nd cookbook's cover, too.  All of the elements merged in July 2010 and adJUSTed FOR YOU II was born.
